Is it a violation of employee privacy to post an employee’s last day of work, after they give notice of resignation, on an employee bulletin board without their consent?

This information is not generally considered private. Some of the very few things that are not private about an employee’s employment are the dates of employment and last position held. That’s why most employers will only allow release of that information, without an employee’s consent, to reference checkers. However, in the future, if you or others don’t want the information to be released for some reason, I suggest making that part of your notice of resignation.
